This creamy, soft Blender Buttermilk Cake is the ultimate quick dessert. Made in minutes using a blender, it’s rich, moist, and perfect for effortless baking.

  • Total Time: 45 minutes
  • Yield: 8 slices

Ingredients

  • Eggs: 2 large
  • Granulated sugar: 1 cup
  • Unsalted butter: ½ cup, melted
  • Vanilla extract: 1 tsp
  • Buttermilk: 1 cup
  • All-purpose flour: 1¾ cups
  • Baking powder: 1½ tsp
  • Baking soda: ½ tsp
  • Salt: ¼ tsp

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8-inch cake pan.
  2. Add eggs, sugar, melted butter, vanilla, and buttermilk to a blender. Blend for 30 seconds until smooth.
  3. Add flour, baking powder, baking soda, and salt. Pulse just until combined — do not overmix.
  4. Pour batter into the pan. Tap gently to remove air bubbles.
  5. Bake for 30–35 minutes until golden and a toothpick comes out clean.
  6. Cool slightly before slicing. Dust with powdered sugar if desired.

Notes

  • Don’t overblend after adding flour — it can toughen the cake.
  • Use room temperature buttermilk and eggs for better texture.
  • This cake is delicious plain, or topped with whipped cream or berries.
