Ingredients

  • Puff pastry sheets: 2 (thawed)
  • Egg: 1 (for egg wash)
  • Water: 1 tbsp (for egg wash)
  • Whole milk: 2 cups
  • Granulated sugar: ½ cup
  • Egg yolks: 4
  • Cornstarch: ¼ cup
  • Vanilla extract: 1 tsp
  • Unsalted butter: 2 tbsp
  • Powdered sugar: for dusting
  • Fresh berries & mint: for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.
  2. Place puff pastry on the tray, prick with fork, and brush with egg wash. Bake for 13–15 minutes or until golden. Let cool and slice into rectangles.
  3. In a saucepan, whisk sugar, egg yolks, and cornstarch. Gradually add milk and cook over medium heat, stirring constantly until thickened (6–8 minutes).
  4. Remove from heat, stir in butter and vanilla. Cover with plastic wrap and chill for 1 hour.
  5. Assemble by layering custard on one pastry piece and topping with another. Dust with powdered sugar and garnish with berries.
