Ingredients
- Puff pastry sheets: 2 (thawed)
- Egg: 1 (for egg wash)
- Water: 1 tbsp (for egg wash)
- Whole milk: 2 cups
- Granulated sugar: ½ cup
- Egg yolks: 4
- Cornstarch: ¼ cup
- Vanilla extract: 1 tsp
- Unsalted butter: 2 tbsp
- Powdered sugar: for dusting
- Fresh berries & mint: for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.
- Place puff pastry on the tray, prick with fork, and brush with egg wash. Bake for 13–15 minutes or until golden. Let cool and slice into rectangles.
- In a saucepan, whisk sugar, egg yolks, and cornstarch. Gradually add milk and cook over medium heat, stirring constantly until thickened (6–8 minutes).
- Remove from heat, stir in butter and vanilla. Cover with plastic wrap and chill for 1 hour.
- Assemble by layering custard on one pastry piece and topping with another. Dust with powdered sugar and garnish with berries.
