Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup powdered sugar
  • ¼ tsp salt
  • ¾ cup unsalted butter, cubed
  • 8 oz cream cheese, softened
  • 1 ½ cups granulated sugar
  • 3 large eggs
  • Zest of 2 lemons
  • ½ cup fresh lemon juice
  • 2 tbsp all-purpose flour
  • ¼ tsp baking powder
  • ¼ tsp salt
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 350°F. Line a 9×9 pan with parchment and set aside.
  2. Mix flour, powdered sugar, and salt. Cut in cold butter until crumbly. Press into pan and bake 18–20 mins.
  3. Beat cream cheese and sugar until smooth. Add eggs, lemon zest, juice, flour, baking powder, and salt. Mix well.
  4. Pour filling over crust. Bake 25–30 minutes until set. Cool completely, then chill 2+ hours.
  5. Dust with powdered sugar. Slice and serve chilled or at room temperature.
