Ingredients

  • Cooked white rice: 2 cups, cooled
  • Mashed potatoes: 1 cup, smooth
  • Breadcrumbs: 1/3 cup
  • Egg: 1 large
  • Garlic: 2 cloves, minced
  • Green onions: 2, finely chopped
  • Parsley: 2 tbsp, chopped
  • Salt & pepper: to taste
  • Vegetable oil: for frying
  • For the sauce:
  • Greek yogurt: 1/2 cup
  • Mayonnaise: 2 tbsp
  • Lemon juice: 1 tbsp
  • Dill: 1 tbsp chopped fresh (or 1 tsp dried)
  • Garlic: 1 clove, grated

Instructions

  1. In a large bowl, mix rice, mashed potatoes, breadcrumbs, egg, garlic, green onions, parsley, salt, and pepper until well combined.
  2. Form mixture into small patties. If sticky, add more breadcrumbs.
  3. Heat oil in a skillet over medium heat. Fry patties for 3–4 minutes per side until golden and crispy.
  4. In a separate bowl, whisk together all sauce ingredients until smooth.
  5. Serve patties warm with a generous spoonful of garlic-dill sauce on the side or on top.

Notes

  • Use leftover rice and potatoes for best texture.
  • Make the sauce ahead of time and refrigerate for deeper flavor.
  • Great served with pickled cucumbers or fresh salad.
