Ingredients

  • 6 large eggs
  • 1 cup whole milk
  • ½ cup heavy cream
  • 1 cup diced cooked ham
  • 1 cup shredded cheddar cheese
  • ½ cup shredded Swiss or mozzarella cheese
  • 1 small onion, diced
  • 1 cup fresh spinach, chopped
  • ½ red bell pepper, diced
  • ½ tsp garlic powder
  • ¾ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil or butter (for sautéing)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish.
  2. Sauté onion and bell pepper in olive oil for 4 minutes. Add spinach and cook until wilted. Let cool slightly.
  3. In a bowl, whisk eggs, milk, cream, garlic powder, salt, and pepper.
  4. Stir in ham, cheeses, and sautéed veggies.
  5. Pour into dish and bake for 35–40 minutes, until center is set and top is golden.
  6. Cool 5–10 minutes before slicing. Garnish with parsley if desired.

Notes

  • Make it ahead for meal prep and refrigerate for up to 4 days.
  • Freeze individual slices wrapped in foil and reheat as needed.
  • Substitute ham with turkey or cooked bacon for variation.
