- 6 large eggs
- 1 cup whole milk
- ½ cup heavy cream
- 1 cup diced cooked ham
- 1 cup shredded cheddar cheese
- ½ cup shredded Swiss or mozzarella cheese
- 1 small onion, diced
- 1 cup fresh spinach, chopped
- ½ red bell pepper, diced
- ½ tsp garlic powder
- ¾ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil or butter (for sautéing)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9-inch pie dish.
- Sauté onion and bell pepper in olive oil for 4 minutes. Add spinach and cook until wilted. Let cool slightly.
- In a bowl, whisk eggs, milk, cream, garlic powder, salt, and pepper.
- Stir in ham, cheeses, and sautéed veggies.
- Pour into dish and bake for 35–40 minutes, until center is set and top is golden.
- Cool 5–10 minutes before slicing. Garnish with parsley if desired.
Notes
- Make it ahead for meal prep and refrigerate for up to 4 days.
- Freeze individual slices wrapped in foil and reheat as needed.
- Substitute ham with turkey or cooked bacon for variation.
