- 1 ½ cups cooked bacon, finely chopped
- 1 cup sweet corn kernels
- 1 ½ cups shredded sharp cheddar cheese
- 4 oz cream cheese, softened
- ¼ cup chopped green onions
- 1 tbsp finely diced red bell pepper
- ½ tsp garlic powder
- ½ tsp smoked paprika
- Salt and black pepper to taste
- 1 sheet puff pastry (thawed)
- 1 egg, beaten (for egg wash)
- Optional: sesame seeds or crushed cornflakes for topping
Instructions
- In a bowl, mix bacon, corn, cheddar, cream cheese, onions, pepper, and spices until well combined.
- Roll out puff pastry and cut into 2-inch squares (about 24 pieces).
- Place 1 tsp filling on each square, fold into a triangle, and seal edges with a fork.
- Brush with egg wash, top with sesame or cornflakes if desired.
- Bake at 400°F for 15–18 minutes until golden. Cool slightly before serving.
Notes
- To make ahead, freeze unbaked bites and bake straight from frozen.
- Vegetarian? Substitute mushrooms or peppers for bacon.
- Great with ranch, mustard dip, or aioli.
