Ingredients

  • 1 ½ cups cooked bacon, finely chopped
  • 1 cup sweet corn kernels
  • 1 ½ cups shredded sharp cheddar cheese
  • 4 oz cream cheese, softened
  • ¼ cup chopped green onions
  • 1 tbsp finely diced red bell pepper
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and black pepper to taste
  • 1 sheet puff pastry (thawed)
  • 1 egg, beaten (for egg wash)
  • Optional: sesame seeds or crushed cornflakes for topping

Instructions

  1. In a bowl, mix bacon, corn, cheddar, cream cheese, onions, pepper, and spices until well combined.
  2. Roll out puff pastry and cut into 2-inch squares (about 24 pieces).
  3. Place 1 tsp filling on each square, fold into a triangle, and seal edges with a fork.
  4. Brush with egg wash, top with sesame or cornflakes if desired.
  5. Bake at 400°F for 15–18 minutes until golden. Cool slightly before serving.

Notes

  • To make ahead, freeze unbaked bites and bake straight from frozen.
  • Vegetarian? Substitute mushrooms or peppers for bacon.
  • Great with ranch, mustard dip, or aioli.
