- Olive oil: ¼ cup
- Soy sauce: 2 tbsp
- Fresh lemon juice: 2 tbsp
- Dijon mustard: 1 tbsp
- Garlic cloves, minced: 2
- Honey or maple syrup: 1 tbsp
- Dried oregano: ½ tsp
- Paprika: ½ tsp
- Salt: ½ tsp
- Black pepper: ¼ tsp
Instructions
- In a bowl, whisk together olive oil, soy sauce, lemon juice, Dijon mustard, garlic, honey, and seasonings.
- Place chicken in a resealable bag or shallow dish and pour marinade over.
- Seal and refrigerate for at least 30 minutes, ideally 4–6 hours or overnight.
- Remove chicken from marinade and cook via grilling, baking, or pan-searing until internal temperature reaches 165°F (74°C).
Notes
- Do not reuse marinade unless boiled first.
- Works for chicken breasts, thighs, drumsticks, and tenders.
- Optional: Add lemon zest or fresh rosemary for extra flavor.
