- Crust and Crumble:
- 2 cups all-purpose flour
- ¾ cup granulated sugar
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup cold unsalted butter, cubed
- 1 large egg
- ½ tsp vanilla extract

- Cream Cheese Filling:
- 8 oz cream cheese, softened
- ¼ cup sugar
- 1 large egg
- ½ tsp vanilla extract
- Peach Layer:
- 2 cups diced peaches (fresh or canned, drained)
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- 2 tbsp brown sugar
- ½ tsp cinnamon (optional)
Instructions
- Preheat oven to 350°F (175°C). Line 8×8-inch pan with parchment paper.
- In a bowl, mix flour, sugar, baking powder, and salt. Cut in butter until crumbly.
- Beat egg and vanilla. Mix into dry ingredients until dough forms. Reserve ¾ cup for topping.
- Press remaining dough into pan. Set aside.
- Beat cream cheese with sugar until smooth. Add egg and vanilla, beat again. Spread over crust.
- In another bowl, toss peaches with lemon, cornstarch, sugar, and cinnamon. Layer over cream cheese.
- Sprinkle reserved crumble on top.
- Bake 35–38 minutes or until golden. Cool 30 min, then chill 30 min more before slicing.
Notes
- Can be made with fresh, frozen (thawed), or canned peaches.
- Use parchment with overhang for easy removal.
- Add chopped almonds or pecans to topping for crunch.
