Ingredients

    • Crust and Crumble:
    • 2 cups all-purpose flour
    • ¾ cup granulated sugar
    • ½ tsp baking powder
    • ¼ tsp salt
    • ½ cup cold unsalted butter, cubed
    • 1 large egg
    • ½ tsp vanilla extract

 

    • Cream Cheese Filling:
    • 8 oz cream cheese, softened
    • ¼ cup sugar
    • 1 large egg
    • ½ tsp vanilla extract

 

  • Peach Layer:
  • 2 cups diced peaches (fresh or canned, drained)
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 2 tbsp brown sugar
  • ½ tsp cinnamon (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line 8×8-inch pan with parchment paper.
  2. In a bowl, mix flour, sugar, baking powder, and salt. Cut in butter until crumbly.
  3. Beat egg and vanilla. Mix into dry ingredients until dough forms. Reserve ¾ cup for topping.
  4. Press remaining dough into pan. Set aside.
  5. Beat cream cheese with sugar until smooth. Add egg and vanilla, beat again. Spread over crust.
  6. In another bowl, toss peaches with lemon, cornstarch, sugar, and cinnamon. Layer over cream cheese.
  7. Sprinkle reserved crumble on top.
  8. Bake 35–38 minutes or until golden. Cool 30 min, then chill 30 min more before slicing.

Notes

  • Can be made with fresh, frozen (thawed), or canned peaches.
  • Use parchment with overhang for easy removal.
  • Add chopped almonds or pecans to topping for crunch.
