Ingredients

  • 1 sheet frozen puff pastry, thawed
  • 1 tbsp olive oil
  • 2 cups fresh spinach, finely chopped
  • 1 garlic clove, minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup crumbled feta cheese
  • 1 egg (for egg wash)
  • 1 tbsp milk or water (to mix with egg)
  • Optional: sesame seeds or parmesan for topping

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Sauté garlic in olive oil, then add chopped spinach, salt, pepper, and oregano. Cook until wilted and moisture evaporates. Cool, then mix with cheeses.
  3. Unfold puff pastry and roll slightly to smooth. Cut in half lengthwise to form 2 long rectangles.
  4. Spread spinach filling on one half. Top with second half and press lightly.
  5. Cut into strips (about 1-inch wide), twist each strip, and place on baking sheet.
  6. Brush with egg wash. Sprinkle sesame seeds or parmesan if desired.
  7. Bake for 20–22 minutes or until golden brown. Cool slightly before serving.

Notes

  • Use frozen spinach if preferred — just thaw and squeeze dry before using.
  • Chill pastry slightly if it becomes too soft to handle while twisting.
  • Great with tzatziki, marinara, or spicy yogurt dip.
