Ingredients

  • 2 cups fresh strawberries, hulled and diced
  • 1 cup rhubarb, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 1 tablespoon honey (or agave syrup)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 jalapeño pepper, seeded and minced (optional for heat)

Instructions

  1. In a medium bowl, combine the diced strawberries and rhubarb.
  2. Add the finely chopped red onion and cilantro to the bowl.
  3. Drizzle in the lime juice and honey, then sprinkle with salt and black pepper.
  4. If you like a bit of heat, add the minced jalapeño pepper.
  5. Gently toss all the ingredients together until well combined.
  6. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  7. Serve chilled as a topping for grilled chicken or fish, or with tortilla chips.

Notes

  • For a sweeter salsa, increase the honey to 2 tablespoons or add a bit of diced mango.
  • Substitute fresh mint for cilantro for a different flavor profile.
